Mealtimes are a great time for families to get together, chat and tell each other about their day (even when we are all at home!). We need to cook and eat meals to keep us in top shape, as parents, as children, as individuals. But eating a balanced meal doesn’t mean it will take ages to make or that you must have a load of ingredients or be an expert cook. It’s about finding recipes that are simple, balanced meals that families enjoy – but also quick to cook at home This is one we make regularly, and it’s great as a meal for the whole family plus the leftovers are perfect for lunches. It can be eaten hot or cold. I thought we’d share our favourite lamb simple balanced meal recipe with you all — it’s perfect for a simple, balanced, tasty dinner.
A flexible meal where you can swap in ingredients you have
You can easily pair the lamb meatloaf with whatever vegetables you have in the kitchen, refrigerator or freezer and it features store cupboard ingredients we often keep to hand. If you don’t have these exact herbs at the moment, you can experiment using thyme, garlic, parsley, paprika, garlic or others. I’ve also suggested some swaps you can make for the meatloaf itself, in case you don’t have all the ingredients.
Finding balanced meals is key to supporting our bodies and helping kids grow. Lean red meat is perfect for getting vitamins and minerals simply and tastily. Animal products, such as fish, eggs, dairy and meat are a great natural source of vitamin B12. Did you know that adults need around 1.5 micrograms of vitamin B12 per day? Lamb is a source of vitamin B12, B6 and zinc which can help the immune system work normally.
Lean cuts of Lamb are so great to use and so versatile too. Here are several reasons why you should try cooking lamb at home for a simple and balanced meal.

- Lamb is naturally rich in protein, low in salt and provides seven vitamins and minerals that contribute towards good health and wellbeing. These are: niacin (vitamin B3), vitamins B6 and B12, zinc, potassium, phosphorus and pantothenic acid.
I’m going to show you how to make this simple, quick and balanced family meal that the whole family will love and leftovers for lunch. The recipe below serves 4 adults.

Lamb Meatloaf Recipe
Ingredients:-
- 250g grams lean lamb mince
- 1 tsp of oil to grease tin
- 1 onion diced
- 250g cooked brown rice
- 3 tbsp tomato puree
- a handful of fresh coriander chopped
- some coriander left over for decoration (optional)
- 2 tbsp vegetable stock or powder
- 2 eggs
- 250ml of Passata
- 1 tsp ground cinnamon
- 1 tsp mixed spice
- 1 tsp oregano
Pre-heat the oven to 180C or gas mark 4. Add the cooked brown rice and the chopped onion to a bowl.
Add tomato puree.
Add vegetable stock.
Roughly chop up the coriander.
Add the coriander, cinnamon, mixed spice and oregano to the bowl.
Mix everything in the bowl together.
Add in the lamb mince.
Knead and mix.
Add in two eggs.
Mix and knead the mixture together. You may find it easier to use your hands.
Line a loaf tin with greaseproof paper and spray with a little oil to stop it sticking.
Pour your passata into the lined tin at the bottom. Spread it out for even and thin coverage.
Add your meatloaf ingredients to the tin and press down flat to fill the loaf tin.
Cover the loaf tin with tin foil. Place in the preheated oven for 1 hour and 25 minutes.
Remove the tin foil and place back in the oven for 15 minutes while you get your vegetables ready. Leave for 5-10 minutes to cool before slicing.
Slice the meatloaf and decorate with some leftover coriander.
Serve with some seasonal vegetables.

What a great use of lamb. I haven’t had meatloaf in years and its something that my husband has been suggesting. I do like the use of rice in there to help with the texture. One to try that for sure. Cheers, Michelle
