I love using the slow cooker, I can put the dinner on in the morning and leave it and it’s ready for the evening. It can feed to whole family and there are so many recipes’ out there. One of my favourites it meatballs. I’ve played around with this recipe a lot and I think I have it perfected, but I’d love to know if you’d add anything or take anything away if you make it. It would be even better if I could make the spaghetti to go with it in there.
Ingredients:-
500g Pack of Beef Mince (I used steak mince)
1 Onion (chopped) (I used chopped frozen onion)
2 tsp Garlic Paste or Crushed Garlic (I used Squeezy Garlic)
1 Egg (beaten)
1 1/2 Cartons of Passata
4 tbsp Tomato Purée
3/4 cup breadcrumbs (I used Gluten Free Bread)
1/4 cup of Grated Parmesan
2 tsp Sugar
2 tsp Basil
Cooked Spaghetti to serve
Directions:-
Mix together in a big bowl the mince, garlic, onion, breadcrumbs, Parmesan, and then add the egg. I use my hands to mix the ingredients together. It’s messy, but it’s the best way. Make sure everything is sticking together, than roll the mixture into about 18 small balls. I put them onto some greaseproof paper until they are all done.
In the slow cooker I add the Passata, tomato purée, sugar and basil. Then I transfer the meatballs in. Put the lid on and cook on low for 8 hours.
Just before taking the meatballs and sauce out, I make two pots of spaghetti, one gluten free and one non gluten free. Place on a bowl, add the meatballs and sauce and sprinkle with some fresh herbs if you have them to hand. I usually have some parsley or coriander I chop.

Has anyone tried the Schwartz slow cooker mixes? They do a whole range of Slow Cookers Recipes Mixes on their website, making things that little bit quicker and simpler. All good in my book.
