Guest Post – Mess-Free Snack Ideas For Your Family Road Trip

Kids, food and cars aren’t the best combination, but with a little planning, you can create the perfection road trip picnic. In this guide we share a few simple recipe ideas for car travel this summer, to help you get on the road with minimal stress, and some very happy kiddies!
Kids Lunch

Pitta pockets

Pitta pockets are the perfect solution to messy sandwiches. Fill some pitta pockets with the kids’ favourite sandwich fillers and make sure you throw some sneaky bits of salad in there too. Grilled chicken, ham and cheese are all child-friendly favourites, and, hopefully, the filling will find its way into their mouths instead of your car floor.
If you’d rather use bread, why not make your sandwiches a little more exciting by creating some sandwich bouquets. These flower shaped sarnies look fantastic, but might be a little messier than the pitta pockets.

Baby kebabs

If you fancy making something different to the everyday sandwich, why not try some mini kebabs for an alternative savoury option? Stick some chicken, lamb, beef or turkey with peppers, onions and courgettes on to little sticks for them to snack on. You might want to save these ones for when you’re stationary and stopped off for lunch though, in order to avoid any kebab stick related accidents.

Fruity salad pots

Kids aren’t crazy about salad, but there are ways to make the green stuff more appealing. Mix up a salad, but make it a bit different by adding passionfruit, grapes, mangoes, pear and any other fruit you like. This colourful dish looks so inviting that the kids just won’t be able to resist! It’s easy to throw together, healthy and tasty. Put a small serving into a little pot for them to snack on in the back.

Mini pizzas

Kids love them, we love them, and you can put whatever you want on them. Make or buy in some pizza bases, cover them with your favorite healthy toppings and stick them in the oven. Ask the kids what they want on theirs and let them have a go at decorating them themselves.
Choose healthier options for toppings and use a thin base. Peppers, sweetcorn and mushrooms all make for great smiley faces so encourage the kids to put as much veg on there as possible!

Sweet treats

long car trips, kids and sugar don’t make for the best recipe, but no summer road trip is complete without some sweet treats. Here’s a couple of ideas for simple dessert road trip recipes.

Tiffin bars

The kids can help you with this one, if you can trust them around all that chocolate mixture, that is! Melt and mix in the butter, sugar, golden syrup and cocoa, add the raisins and biscuits, and place into a baking tin. Pour the melted chocolate over the top, and give the whole thing an hour to set in the fridge.

Eton Mess

As it’s the season for Wimbledon, strawberries and cream, we just had to include this British classic, even if it is a little messy! Crush up some meringue, and mix in some double cream, frozen yoghurt or ice cream, then add strawberries, raspberries and fruit coulis. Put some in individual tubs and the kids can eat in the sunshine when you stop for lunch.
