Fish is the Dish have a new campaign called Healthy and Happy Hearts, the challenge is to encourage families to eat fish twice a week. You can find out more about the challenge on the Fish is the Dish Website. They have tips, recipes and advice from not one but three Healthy Happy Heart Experts.
This week one of the fish dishes we’ve had is Fish Bites and Flat Bread. You can use pretty much any fish for this one, but I’d recommend a white fish.
Ingredients for Fish Bites:-
3 Wild Haddock Fillets (or any fish fillets)
6 tblsp Cornflour
100g Plain flour
50ml Water (you me need more or less depending on the amount of flour, etc)
Pinch Salt
Pinch Pepper
Sunflower Oil (to fry with)
Mix the flour, water salt and pepper to make a thickish batter. Cut the fish into bite size pieces. Coat the fish pieces with cornflour and then dip in the batter. Drop the battered fish pieces into hot oil. Cook until golden brown.
Ingredients for Flatbread:-
400g Flour
Water to bind
Pinch Salt
Pinch Pepper
2 tsp Chilli
2 tsp Garlic
1 tsp Olive Oil
Xatham Gum (if making Gluten free version)
Mix all the ingredients together and knead for a few minutes. Roll out and cook on a medium heat frying pan. These ingredients make two round flat breads.
Both of these recipes we have subsituted the flour for gluten free flour and they work just as well.
I served with some chilli dipping sauce and it was delicious.
This was a great dish, something a little different and suitable for the boys, gluten free diet hubby and myself.
