Fish Is The Dish – Beer Battered Hake

I was sent through some yummy Hake Fillets from the wonderful John Milne at Delish Fish. Hake is something I have only ever tried once before in a restaurant so I was looking forward to giving it a go myself.

The lovely Fish is the Dish people sent me through a recipe for Hake Bobotie, but I’m not keen on cream or eggs so I decided to give this one a miss, but if you like these ingredients you can get it from their website. It does look delicious. 

I have never made my own battered fish before so I thought I’d give it a go with Beer battered fish.

Ingredients:- 

250 grms Flour ( I used Gluten Free Flour)
1 tsp salt
1 tsp Fresh Rosemary finely chopped
1 tsp Fresh Coriander finely chopped
300ml Beer (I used Soda Water as my recipe was Gluten Free)
4 Hake Fillets

First I made the batter, I put the flour, salt, herbs and soda water into a bowl and whisked until smooth. It looks a bit like pancake batter at this point.

I got my frying pan ready at this point with enough oil so that the fillets were almost immersed into the oil. I put it on for the oil to heat up. Next I floured the fillets, just lightly before adding them to the batter.

This is the messy bit. Add your fillets to the bowl of batter, making sure they are completely covered. Add to the hot oil making sure you don’t burn yourself. That is something I normally do. 
Once this fish is cooked through, it will look white throughout and not clear/opaque, I took it out and put it on some kitchen roll to absorb some of the excess oil.
I served it up with a spoonful of tartar sauce and some oven chips. Here’s my finished dish.
I have to say I was very impressed by this, it was delicious. The batter was crisp, fluffy, light and tasty. Way better than anything out of the chip shop and I am partial to a fish supper. It was easier than I thought to make and wasn’t greasy as I thought it might be. There was no oil at all coming out of the fish when I cut it open. The Hake was tasty and a very meaty fish. A lot thicker and chunkier than cod, etc. It had more of a meat texture, but with a fish taste if that makes sense. It went down well with the rest of the family and I am adding it to one of our favourite meal lists.
