Fish Is The Dish – Fish Goujons And Lemon Sole

I was sent through some Lemon Sole Fillets from the wonderful John Milne at Delish Fish. Now these are some awesome fillets, look how good they look.

The lovely Fish is the Dish people sent me through a recipe for Fish Goujons for the boys and Lemon Sole with French Beans for us adults.

Fish Goujons

The Ingredients:- 


6 Jacobs Cream Crackers (Crushed)
1 Egg (Beaten)
Flour (For Dusting)
1 Lemon Sole (per child)

How to Cook:- 

Cut the lemon sole into strips, not too thin. Smash up the crackers until small. Heat up the oil in the frying pan to shallow fry. Next dust the strips in flour, then add to the egg and next add the cream crackers to the outside. Shallow fry. Once cooked put on some kitchen roll to soak up excess oil.

Both boys loved these and I was surprised by the Jacobs crackers part, but honestly this made the dish. I sneaked one before putting them on their plates and they tasted delicious. I would definitely make these for myself. These are the best goujons I have tasted and I made them. Who knew. 

Lemon Sole

Ingredients:-

Lemon Sole Fillets (1 per adult)
Chopped Almonds
French Beans
Flour (For Dusting)
80g Butter
How to Cook:-

Dust the fillets with flour, I used Gluten Free flour. Cook your green beans. Then fry in a hot frying pan with oil to shallow fry. Whilst this is cooking brown the butter in a pan. Then add in the green beans and the almonds. Take the fish out when cooked and place it on kitchen roll. Serve the fish on a plate and spoon the butter, green beans and almonds over the top. I served with some veg and some oven chips.

Hubby and I had this with the boys having the goujons and it was delicious. I am not one for having just plain white fish, but then that has been from my past when you used to get the white fish cooked in milk, which I hate. This however was something that was quick, easy to make and very tasty. One I will be cooking again. 
The lovely John at Delish Fish sent us through some Hot Smoked Salmon Fillets to try of different varieties. These I have to say were to die for. Simply Divine. If you like Hot Smoked Fish, you will LOVE these. 
My favourite was the Chili Smoked one.
